sweet and bitter greens

Its been a busy week at nobó with a reconnaissance mission to London and the start of our Foodworks programme occupying most of our time. So, here’s a quick and easy recipe that we put together late one of the nights. Its really tasty and combines the sweetness of orange juice and raisens, with bitter greens and toasted almonds for a nice crunch.

It can easily be adapted to a main dish with the addition of some soba noodles. Feel free to double up and enjoy the leftovers the next day, we did! I used york cabbage and pak soi to make this but kale and spinach would also work well.

Toasting almonds? A really quick an easy way to toast your almonds is to heat a small heavy bottom pan and throw a handful of flaked almonds in, tossing until browned and toasty. You can also toast them in the oven but I find this method easiest as I can do it quickly and in small batches.

sweet and bitter greens

makes enough for a side for 4 or main for 2
1 head york cabbage
1 head pak soi
3 cloves garlic – finely slices
fresh ginger
juice from 1/2 orange
1/3 cup flaked almonds – toasted
1/3 cup raisins
1 tablespoon olive oil
1 tablespoon tamari (or soya sauce)
1 tablespoon caraway seeds
salt and pepper to season
– Wash and chop your greens (no need to dry your greens off) and finely slice garlic and ginger.
– In a large pan heat oil, add garlic and ginger and lightly brown, add chopped greens.
– Cover until wilted (be careful not to overcook) and add tamari, orange juice, raisins, caraway seeds.
– Continue to cook until tender
– Taste and season as desired
– Serve with toasted almonds
